I will explain what I want to know:
When there is a top-level domain like google.com, you can set its the DNS type A record or CNAME record to do point it to an IP address (exemple: google.fr = 8.8.8.8 in a A record)
But I want to know what happens when we use subdomains... Is it the same thing ? DO I precise video.google.fr to a DNS server to point to a record like a 9.9.9.9 server ?

I suggest you read a book on DNS :-) There is nothing special about a "subdomain". It's just another domain name with an A-type resource record allocated to it.
